
In the weeks leading up to Christmas, families all over the villages harvest their pigs. Ileana and her sister Maria clean the eye sockets of Ileana’s pig, while their neighbor Maria appraises its weight. Every day from spring until winter, Ileana cooked her pig a hot meal of corn, squash and collard greens using a family recipe. All this work was not from love of the animal, but from joy at the taste of fatback.
